Ginger is a perennial herb with a thick spreading tuberous rhizome root. Each
year it sends up a green reed like stock with narrow leaves and flowers on a spike direct from the root. Ginger has been used as a domestic spice remedy for thousands of yeas, especially in the East. Dried ginger is the spiciest form of ginger, mature ginger next, and young ginger the least.
